- 1 large onion
- 1 green pepper, diced
- 4 Tbsp. olive oil
- 1 (1 lb.) can tomatoes
- 2 Tbsp. flour
- 4 large carrots
- 1 Tbsp. salt
- 1 lb. lentils
- 2 qt. water
Directions

1Cook onion and green pepper in olive oil until golden.

2Stir in flour and cook until bubbling.

3Do not brown.

4Add tomatoes, carrots, salt, lentils and water.

5(Add lentils right from package.)

6Cook, covered, over low heat for 2 hours.

7Stir occasionally.

8Serves 6 to 8.
