- 1 lb. dried lentils
- 1 soup bone
- 2 1/2 qt. water
- 2 c. chopped onion
- 1 1/2 c. diced carrots
- 1 c. diced celery
- 4 garlic cloves, crushed
- 1/4 tsp. pepper
- 1 bay leaf
Directions

1Rinse lentils in cold water; drain.

2In heavy 5-quart Dutch oven, combine lentils and remaining ingredients.

3Bring to a boil over medium heat.

4Lower heat and simmer, uncovered, for 2 hours, stirring occasionally.

5Remove bone; cut meat from bone and return meat to soup.
