Ingredients

  • 2 c. dried lentils, soaked overnight
  • 2 slices bacon
  • 1/2 c. chopped celery
  • 1/2 to 3/4 c. chopped onion
  • 1/4 c. diced carrot
  • 8 c. water
  • 2 Tbsp. wine vinegar
  • 1 clove garlic
  • 2 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. oregano
  • 1 (16 oz.) can or 4 fresh diced tomatoes

Directions

    Drain lentils.

    Combine all ingredients (except tomatoes and vinegar).

    Cover and simmer 1 1/2 hours.

    Add tomatoes with juice. Add vinegar.

    Cover and simmer for about 30 more minutes.
