Ingredients
- 1 lb. lentils
- 2 carrots, chopped
- 1 large onion, chopped
- 2 ribs celery, chopped
- 1 garlic clove, minced
- 1 (6 oz.) can tomato paste
- 1 Tbsp. red wine vinegar
- 1 bay leaf
- 2 tsp. salt or salt substitute
- 1/4 tsp. black pepper
- 8 c. water
Directions

1Rinse lentils.

2Pour lentils into deep pot; add all other ingredients and water.

3Bring to a boil.

4Cover; simmer until lentils are cooked, about 1 1/2 hours.

5Season to taste.

6Serve with salad and crusty bread.
