Ingredients
- 2 1/4 cups lentils, washed and cleaned
- 6 cups water
- 1 lb thick slab bacon, cut in 1 inch pieces
- 3 potatoes, peeled and cut into 1/2 in cubes
- 1/2 cup vinegar
- 1/4 cup sugar
- salt
- 2 tablespoons butter
- 2 onions, chopped
- 2 tablespoons parsley
Directions

1Combine lentils,water and bacon in a large heavy saucepan .

2Bring to a boil, then reduce heat.

3Cover and simmer for 45 minutes.

4Add potatoes and continue to cook until lentils are tender about 15 minutes.

5Stir in vinegar and sugar.

6Taste and add salt if needed.

7Place in serving dish and keep warm.

8Melt butter in skillet ;saute onions and parsley over medium heat until onions are transparent.

9Spoon over lentils.

10Serve hot.
