  • 1 pound black beans
  • 6 c. water
  • 1/2 c. olive oil
  • 1 tbsp. white or cider vinegar
  • 1 onion
  • 2 green bell peppers
  • 3 garlic cloves
  • 2 tsp. cumin
  • 2 tsp. oregano
  • 4 green olives
  • 1 tbsp. sugar
  • 3 to 4 bay leaves
  • 3 tbsp. of ketchup
  • salt to taste
  • 1/4 c. chopped cilantro

    {"0":"Leave beans to soak overnight in cold water covered with half of the onion and half of the green pepper.","2":"Bring 6 cups of water to a boil. Add beans (throw out the onion and green pepper that was left with the beans overnight). Simmer.","4":"While beans are simmering , roast the remaining green pepper til the skin is black.
