Light Freezer Rolls

Ingredients
- 2 c. milk
- 2 pkg. yeast
- 6 eggs
- 1 c. sugar
- 1 c. shortening
- 2 tsp. salt
- 9 c. flour
Directions

1Scald the milk.

2Cool (lukewarm) and add the yeast; set aside. Beat in a bowl the eggs, sugar, shortening and salt. Add cooled milk mixture to bowl mixture.

3Add 4 1/2 cups flour (not all at once).

4Beat with mixer for 2 minutes.

5Add 4 1/2 cups flour by hand.

6Knead on floured surface.

7Place in a large bowl and cover with clean cloth.

8Let rise until double in size.

9Punch down and divide in 6 parts.

10Roll out into 9-inch circles.

11Brush with margarine and cut into pie wedges (6 to 8 per circle). Start at wide end and roll wedge to point.

12Place on cookie sheet and freeze. When frozen, store in freezer bags. Can be kept in freezer for about 1 month.

13Makes 3 to 4 dozen rolls.
