  • 1 1/3 c. water
  • 3 egg whites
  • 1 pkg. light yellow or white cake mix
  • non-stick cooking spray
  • 2 c. skim milk
  • 1 small pkg. instant banana cream pudding mix
  • 2 (8 oz.) cans crushed pineapple, drained
  • 2 c. frozen whipped topping, thawed
  • 1/4 c. shredded coconut, toasted (topping)

Directions

    Combine water, egg whites and cake mix.

    Beat on low for 30 seconds, then medium for 2 minutes.

    Pour into 9 x 13-inch pan sprayed with cooking spray.

    Bake at 350° for 35 minutes.

    Cool on rack.
