Ingredients

  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon olive oil
  • 1 zucchini, chopped (optional)
  • 1 (14 1/2 ounce) can low sodium beef broth
  • 1 (14 1/2 ounce) candiced Italian tomatoes
  • 3 ounces turkey pepperoni, chopped
  • 1 teaspoon pizza seasoning
  • 12 cup low fat part-skim mozzarella cheese
  • 1 (14 1/2 ounce) jar pizza sauce
  • 12 teaspoon crushed red pepper flakes (optional)
  • salt and pepper

Directions

    Saute onions and peppers in olive oil over medium heat until they just begin to soften.

    Add garlic and seasoning and saute for 1-2 minutes more.

    Add the peppers and onions to the pot along with the zucchini, broth, tomatoes, pizza sauce, red pepper (if desired) and pepperoni.

    If cooking on the stovetop, cook on medium/low for at least 20 minutes.

    If using the crock pot cook on low for 3-4 hours.

    season with salt and pepper.

    Serve topped with 2 tbs mozzarella.
