Light Pizza Soup

Ingredients
- 1 onion, chopped
- 1 green pepper, chopped
- 2 garlic cloves, chopped
- 1 teaspoon olive oil
- 1 zucchini, chopped (optional)
- 1 (14 1/2 ounce) can low sodium beef broth
- 1 (14 1/2 ounce) candiced Italian tomatoes
- 3 ounces turkey pepperoni, chopped
- 1 teaspoon pizza seasoning
- 12 cup low fat part-skim mozzarella cheese
- 1 (14 1/2 ounce) jar pizza sauce
- 12 teaspoon crushed red pepper flakes (optional)
- salt and pepper
Directions

1Saute onions and peppers in olive oil over medium heat until they just begin to soften.

2Add garlic and seasoning and saute for 1-2 minutes more.

3Add the peppers and onions to the pot along with the zucchini, broth, tomatoes, pizza sauce, red pepper (if desired) and pepperoni.

4If cooking on the stovetop, cook on medium/low for at least 20 minutes.

5If using the crock pot cook on low for 3-4 hours.

6season with salt and pepper.

7Serve topped with 2 tbs mozzarella.
