  • 1 c. raisins, soaked in warm water for 15 minutes
  • 1 c. canned unsweetened pumpkin puree
  • 1 c. brown sugar
  • 1 Tbsp. vanilla
  • 2 Tbsp. canola oil
  • 2 c. oat bran
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. each ground allspice and cloves
  • 3 egg whites

    Preheat oven to 350°; spray an 8 1/2 x 4 1/2-inch loaf pan with Pam or Baker's Joy.

    In a mixing bowl or food processor, blend the pumpkin puree, 3/4 cup of the brown sugar, vanilla and oil; mix until well combined.
