Light Wild Rice Soup

  • 1/3 c. chopped carrot
  • 1/3 c. chopped celery
  • 1/3 c. chopped onion
  • 2 Tbsp. margarine or butter
  • 1 1/3 c. cooked wild rice
  • 1 (12 oz.) jar turkey gravy
  • 1 1/2 c. skim milk
  • 2 Tbsp. dry sherry

Directions

    Saute vegetables in margarine in 2-quart saucepan over medium heat until tender.

    Stir in rice, gravy and milk.

    Reduce heat to low.

    Simmer 5 minutes.

    Stir in sherry.
