Lima Bean Bake

- 1 (1 lb.) pkg. dry lima beans
- 1/2 lb. salt pork (fatback)
- 1 c. granulated sugar
- 1 tsp. ground ginger
- 1 large onion
Directions

1Wash beans and drain.

2Put in pot; cover with water and the ground ginger.

3Cook slowly until soft when you pierce with fork. Add more water if necessary.

4Dice the salt pork into small squares and saute until lightly browned.

5Add 1 large onion (diced) and cook until soft.

6Add a small amount of bean water and sugar.

7Bring to a boil.

8Put all ingredients into casserole dish; stir to distribute salt pork and onion.

9Bake in a 350° oven for about 1 1/2 hours or until light brown on top.
