Lima Bean Dip

Ingredients
- 1 onion chopped
- 2 cloves garlic peeled
- 2 cans lima beans 15 oz each, drained and rinsed
- 1 lemon juiced
- 6 tablespoons olive oil plus additional, to drizzle
- 8 ounces tomatoes seeded and finely chopped
- 2/3 cup cucumber chopped
- 2 tablespoons flat leaf parsley chopped
- pita bread Toasted, to serve
Directions

1Place onion and garlic in a food processor and process until finely chopped. Add 1 can of lima beans, lemon juice and 4 tbsp of the olive oil. Season with salt and pepper. Process until smooth, adding remaining 2 tbsp oil if needed. Spoon into a serving bowl.

2Mix remaining lima beans, tomatoes, cucumber and parsley. Spoon over dip. Sprinkle with freshly ground black pepper and drizzle with additional oil. Serve with pita bread.
