Lima-Corn Bake

  • 1 (10 oz.) pkg. frozen lima beans, thawed, or fresh
  • 1 (10 oz.) pkg. frozen corn Niblets, thawed, or fresh
  • 2 small tomatoes, thin sliced
  • 1 small onion, thin sliced
  • 1 clove garlic, crushed (more if you like)
  • 1 c. or more tomato juice

Directions

    Place 1/2 the lima beans in bottom of nonstick baking pan. Top with a layer of corn, then top the corn with 1/2 of the tomato slices, the onion and garlic.

    Top with another layer of lima beans and corn; end with tomato slices.

    Pour tomato juice over all.

    Cover and bake at 350° for 40 minutes.

    Serves 4 to 6.
