Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk*
  • 1/2 cup cream of coconut
  • 1/4 cup Land O Lakes Margarine, melted
  • 1 Land O Lakes Egg, slightly beaten
  • 1 tablespoon fresh lime juice
  • 2 teaspoons freshly grated lime zest
  • 1/2 cup powdered sugar
  • 1 tablespoon fresh lime juice

Directions

    Heat oven to 350F.

    Grease bottom and sides and lightly flour 8x4-inch loaf pan; set aside.

    Combine flour, sugar, baking powder and salt in bowl; set aside.

    Combine all remaining bread ingredients in another another bowl; mix well.

    Add flour mixture to just buttermilk mixture; mix just until moistened.

    Spread into prepared pan.

    Bake 40-50 minutes or until light golden brown and toothpick inserted in center comes out clean.

    Let cool 10 minutes in pan; remove to cooling rack.

    Cool completely.

    Combine powdered sugar and 1 tablespoon lime juice in bowl; mix well.

    Drizzle over bread; let stand until glaze is set.
