  • 2 Tablespoons Pine Nuts
  • 1 ounces, weight Parmesan Cheese
  • 1 clove Garlic
  • 1 whole Lime, Zest And Juice
  • 1 ounces, weight Basil Leaves
  • 6 Tablespoons Extra Virgin Olive Oil
  • Salt And Pepper, to taste

Directions

    Slightly roast the pine nuts in a dry frying pan over medium heat for 3 minutes.

    Then remove the pan from the oven and let them cool on a plate.

    Blend the pine nuts, cheese and garlic in a food processor until you reach a fine texture.

    Add the zest, juice, basil leaves and olive oil and blend into a pesto.

    Season with salt and pepper.
