Lime Scallion Chicken

- 1 bunch scallions
- 1 1/2 lb. skinless, boneless chicken breasts
- 1/4 c. flour
- 2 Tbsp. canola oil or vegetable oil
- 2 Tbsp. light margarine, separated
- 2 oz. lime juice or 2 fresh limes
Directions

1Slice scallions into thin rings (use most of scallion).

2Cut breasts into about 8 to 10 pieces; coat with flour.

3Heat oil and 1 tablespoon margarine in a large skillet over medium-high heat. Add chicken; brown on each side until golden, about 4 minutes on each side.

4Remove chicken to a serving tray and keep warm.

5Add 1 tablespoon margarine and scallions to pan; cook for 2 minutes.

6Add lime juice; cook 30 seconds.

7Pour over chicken and serve.

8Yield: 4 servings.
