Ingredients

  • 1 lb. chicken (boneless and skinless)
  • 2 Tbsp. butter or margarine
  • 1 can chicken broth
  • 1 can stewed tomatoes
  • juice of 1 lime
  • 1 c. minced onion
  • 1 c. minced celery
  • 1 c. minced green pepper
  • 1 (8 oz.) jar salsa

Directions

    Saute chicken in margarine until browned.

    Add onion, celery and pepper.

    Saute, stirring, until tender.

    Add chicken broth, stewed tomatoes (broken up with spoon) and lime juice.

    Heat through.

    Add salsa and cook over low heat until hot.

    Serve with garnish of cilantro sprig and lime slices.

    Good with tortilla strips.
