Ingredients
- 1 c. dry kidney beans
- 1 lb. linguica
- 1 large onion, chopped
- 1 small cabbage, chopped or 2 lb. kale
- 3 garlic cloves, minced
- 1 Tbsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. vinegar
- 10 1/2 oz. can tomatoes
- water
- 4 to 5 medium potatoes, cubed
Directions

1Soak kidney beans in water overnight; drain.

2Cook, brown and slice linguica.

3In a large 8-quart pot, add linguica, onions, beans, cabbage, garlic, salt, pepper, vinegar and tomatoes.

4Add water to cover.

5Bring to boil.

6Lower heat and simmer 30 minutes. Then add tomatoes and simmer an additional 2 hours.

7Add the cubed potatoes the last 1/2 hour.
