Linguica Soup

Ingredients

  • 1 c. dry kidney beans
  • 1 lb. linguica
  • 1 large onion, chopped
  • 1 small cabbage, chopped or 2 lb. kale
  • 3 garlic cloves, minced
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. vinegar
  • 10 1/2 oz. can tomatoes
  • water
  • 4 to 5 medium potatoes, cubed

Directions

    Soak kidney beans in water overnight; drain.

    Cook, brown and slice linguica.

    In a large 8-quart pot, add linguica, onions, beans, cabbage, garlic, salt, pepper, vinegar and tomatoes.

    Add water to cover.

    Bring to boil.

    Lower heat and simmer 30 minutes. Then add tomatoes and simmer an additional 2 hours.

    Add the cubed potatoes the last 1/2 hour.
