Ingredients

  • 2 c. coarsely, chopped broccoli
  • 1 c. julienne carrot strips
  • 1/2 c. sliced onion
  • 1 tsp. Italian seasoning
  • 2 cloves crushed garlic
  • 1/4 tsp. ground black pepper
  • 2 Tbsp. margarine
  • 1 c. coarsely chopped tomato
  • 12 oz. linguine, cooked in unsalted water and drained
  • 1 (8 oz.) carton Egg Beaters
  • 1/4 c. grated Parmesan cheese

Directions

    In skillet, over medium heat, cook and stir broccoli, carrots, onion, Italian seasoning, garlic and pepper in margarine for 3 minutes.

    Add tomato. Cook for 1 minute or until vegetables are tender-crisp. Toss with hot linguine, Egg Beaters and cheese. Serve immediately.
