- 1 lb. linguini
- 3 Tbsp. butter, divided
- 2 c. sliced fresh mushrooms
- 1/2 c. chopped scallions
- 2 cloves garlic, minced
- 1 lb. sea or bay scallops
- 1/2 c. chicken broth
- 1/2 tsp. thyme
- 1/2 tsp. pepper
- 2 Tbsp. flour
- 1 c. half and half
- 1/2 c. chopped fresh parsley
Directions

1Cook linguini. Drain and cover to keep hot.

2Melt 1 tablespoon butter in skillet. Add mushrooms, scallions and garlic. Saute until tender. Add scallops, broth, dash of salt, thyme and pepper. Cover and simmer 5 minutes or until scallops are tender. Add parsley.
