- 1/4 c. melted butter
- 1 c. milk
- 1 large egg
- 1/4 tsp. almond extract
- 2 c. all-purpose flour
- 1/3 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- raspberry jam
- confectioners sugar
Directions

1Preheat oven to 400°.

2Grease twelve 2 1/2-inch muffin pan cups.

3Whisk together melted butter, milk, egg and almond extract. Combine flour, sugar, baking powder, salt and cinnamon in separate bowl.

4Stir wet ingredients into dry ingredients.

5Spoon batter evenly into muffin cups, filling each about three-quarters full.

6After filling cups, insert 1/2 teaspoon raspberry jam into each.

7Bake 20 to 22 minutes, until toothpick inserted in center of muffin comes out clean.

8After baking, sift on 1 tablespoon confectioners sugar.
