- 3 eggs, separated
- 1 Tbsp. sugar
- 3 packets sugar substitute
- 2 c. low-fat milk
- 1/4 c. rum or 1/2 tsp. rum extract
- 1 tsp. vanilla extract
- ground nutmeg
Directions

1Beat egg whites at high speed until they form soft peaks.

2In a large bowl with same beaters and high speed, beat yolks and sugar substitute until lemon colored.

3Stir in milk, rum, vanilla and nutmeg.

4With wire whisk, fold beaten egg whites into milk mixture. To serve, sprinkle with additional nutmeg.

5Serve immediately. Makes 5 (1 cup) servings.
