- 12 ounces Simply Potatoes® Shredded Hash Browns
- 1/4 cup sliced green onion
- 1/2 cup diced red bell pepper
- 1/4 cup sun-dried tomato
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded cheddar cheese
- 1/4 cup bacon bits
- fresh cilantro leaf, for garnishing
Directions

1Heat vegetable oil in a large skillet over medium heat. Add hashbrowns, onions, peppers, tomatoes, and chopped cilantro. Cook for 10-15 minutes, turning frequently, until potatoes are golden brown and peppers are fork tender. Remove from heat and place in a casserole dish. Sprinkle with cheese and bacon bits. Garnish with fresh cilantro sprig.
