  • 1-1/4 gal. milk
  • 1-1/2 qt. light cream or half-and-half
  • 1/3 cup onions, finely chopped
  • 2 Tbsp. salt
  • 3/4 tsp. black pepper
  • 3/4 tsp. paprika
  • 1 cup instant tapioca
  • 1-1/2 qt. cooked lobster, flaked
  • 1 cup butter

Directions

    Combine milk, cream, onion and seasonings in top of double boiler or in small steam-jacketed kettle; heat just until scalded.

    Stir in tapioca; cook 5 minutes, stirring frequently.

    Add lobster and butter; mix well.

    Reduce heat to medium-low; simmer 30 minutes, stirring occasionally.
