- 1/2 pounds Penne Or Macaroni
- 2 cups Low Fat Milk
- 4 Tablespoons Butter, Divided
- 1/4 cups Flour
- 6 ounces, weight Grated Gruyere Cheese
- 4 ounces, weight Grated Reduced Fat Sharp Cheddar Cheese
- 1 teaspoon Kosher Salt
- Freshly Ground Black Pepper, To Taste
- 1/2 pounds Freshly Cooked Lobster Meat
- 2 slices Whole Wheat Sandwich Bread, Pulsed In Food Processor To Form Crumbs

1Preheat oven to 350 degrees F. Lightly coat an 11 x 7 inch baking dish with canola oil cooking spray.

2Bring a medium pot of water to a boil.

3Add in penne and cook until al dente (about 2-3 minutes less than the amount of time recommended on the package).

4Drain.

5Meanwhile, heat milk in a small saucepan over medium-low heat until hot but not boiling.

6Turn off heat.

7Melt 3 tablespoons butter in a large saucepan over low heat.

8Whisk in flour for 1 minute.

9While continuing to whisk, pour in the hot milk and whisk the mixture until smooth and thick, about 1 minute.

10Remove from heat and stir in the grated cheeses, salt, and pepper.

11Stir in the drained cooked penne and lobster meat until fully combined.

12Pour mixture into the prepared baking dish.

13Melt the remaining 1 tablespoon butter in the microwave and stir in the breadcrumbs until moistened.

14Evenly spread the buttered breadcrumbs over the penne, cheese, and lobster mixture.

15Bake for 2530 minutes, or until the breadcrumbs are golden brown and the cheese is bubbly.
