  • 2 tablespoons plus 1 teaspoon medium-dry sherry
  • 3 tablespoons plus 1 teaspoon brandy

  • 1/4 teaspoon freshly grated nutmeg
  • cayenne to taste
  • 4 large egg yolks, beaten well
