Long Grain “Stuffing” Rice

  • 2 stalks Celery
  • 1/2 whole Yellow Onion
  • 1/4 cups Pine Nuts
  • 1 package Near East Long Grain Wild Rice
  • 1/4 cups Craisins
  • 1/2 teaspoons Cracked Pepper
  • 1/4 cups Chopped Fresh Parsley

Directions

    Chop celery and onion and saute until tender. Toast pine nuts until golden brown.

    Cook rice according to package instructions. Combine cooked rice, sauteed veggies, pine nuts, Craisins and pepper. Stir and serve. Fresh parsley can be added at the end but not necessary.

    Eat, repeat. Enjoy!
