  • 14 cup honey
  • 12 teaspoon lemon rind (grated)
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 teaspoons canola oil
  • 1 cup onion (minced)
  • 1 cup green pepper (minced)
  • 2 garlic cloves (minced)
  • 1 12 lbs ground chicken
  • 12 cup breadcrumbs
  • 12 cup zucchini (shredded)
  • 12 teaspoon salt
  • 12 teaspoon lemon rind (grated)
  • 14 teaspoon fresh cracked pepper
  • 2 teaspoons Dijon mustard
  • 2 teaspoons lemon juice
  • 1 teaspoon soy sauce

Directions

    Heat oven 400.

    Whisk together the honey, rind, soy sauce, dijon and juice.

    Set aside.

    Heat oil in a skillet.

    Add onion, pepper and garlic.

    Saute 3 minutes.

    Add chicken.

    Saute 5 minutes.

    Remove from heat.

    Let cool.

    Stir in the breadcrumbs, zucchini, salt, rind, pepper, dijon, juice and soy sauce.

    Place on a sprayed baking sheet.

    Bake 20 minutes or until golden.
