- 14 cup honey
- 12 teaspoon lemon rind (grated)
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 2 teaspoons canola oil
- 1 cup onion (minced)
- 1 cup green pepper (minced)
- 2 garlic cloves (minced)
- 1 12 lbs ground chicken
- 12 cup breadcrumbs
- 12 cup zucchini (shredded)
- 12 teaspoon salt
- 12 teaspoon lemon rind (grated)
- 14 teaspoon fresh cracked pepper
- 2 teaspoons Dijon mustard
- 2 teaspoons lemon juice
- 1 teaspoon soy sauce
Directions

1Heat oven 400.

2Whisk together the honey, rind, soy sauce, dijon and juice.

3Set aside.

4Heat oil in a skillet.

5Add onion, pepper and garlic.

6Saute 3 minutes.

7Add chicken.

8Saute 5 minutes.

9Remove from heat.

10Let cool.

11Stir in the breadcrumbs, zucchini, salt, rind, pepper, dijon, juice and soy sauce.

12Shape into 1/2 inch balls.

13Place on a sprayed baking sheet.

14Bake 20 minutes or until golden.

15Pour sauce over.

16Stir to coat.

17Bake 5-10 more minutes.
