  • 1 1/2 pounds green beans or young runner beans
  • 1 large onion, coarsely chopped
  • 45 tablespoons olive oil
  • 4 cloves garlic, sliced
  • 4 tomatoes, peeled and chopped
  • Salt and pepper

    Top and tail and wash the beans.

    Cut the runner beans into 2 or 3 pieces.

    In a saucepan, fry the onion in oil until soft.

    Add garlic, and when the onions and garlic begin to color, add the tomatoes and the beans.

    Only just cover with water, add salt and pepper, and simmer, uncovered, until the beans are tender and the liquid is reduced.

    Serve cold.
