Lovely Raspberry Jam Cake

  • 3 whole Eggs
  • 1-1/2 cup Sugar
  • 4 Tablespoons Butter
  • 3 cups All-purpose Flour
  • 11 ounces, fluid Raspberry Jam
  • 1 Tablespoon Baking Powder

    Prepare a pan in which the cake will be baked. Choose one about 15 cm x 30 cm (or about 6 inches x 12 inches). Grease it with butter and dust with a little bit of all-purpose flour (1 tablespoon is enough). Or, as I did, line it with parchment paper. Preheat oven to 325°F.

    Put eggs, sugar and butter into a mixer bowl and beat until all is turned into a cream. Then, drop that mixture into a large bowl,and gently mix in the all-purpose flour and jam. Add the baking powder and again stir gently.

    Transfer the mixture to the pan and bake for 25 to 30 minutes, or until an inserted fork comes out clean. Note: do not open the oven before 20 minutes of baking.

    I decided to add a little twist and use some cream cheese frosting! It gets even more delicious. You should try it!
