  • 1 c. crushed high protein cereal (unsweetened)
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 lb. boiler-fryer chicken pieces
  • 1/2 c. skimmed evaporated skim milk

Directions

    Mix the crushed cereal, salt and pepper together on a flat plate. Dip chicken pieces into milk, then roll them in the cereal mixture. Place them, skin side down, on a nonstick cookie sheet. Bake 30 minutes in a preheated 350° oven. Turn and bake on other side 30 minutes.
