- 1 (16 oz.) can solid pack pumpkin
- 1 (13 oz.) can evaporated skim milk
- 1 egg
- 2 egg whites
- 1/4 c. biscuit mix (Bisquick type) or graham cracker crumbs
- 2 Tbsp. sugar
- 8 packets sugar substitute
- 2 tsp. pumpkin pie spice
- 2 tsp. vanilla
Directions

1Heat oven to 350°.

2Lightly spray a 9-inch pie pan with vegetable spray.

3Place all ingredients in mixing bowl.

4Blend 2 minutes in blender or bowl.

5Pour in pie pan and bake for 50 minutes or until center is puffed up.

6To serve, cut into 8 pieces.
