  • 1 large eggplant
  • 1 cup Mozzarella cheese
  • 1 dash garlic salt
  • 1 dash Black pepper
  • 1 dash oregano
  • 16 slice pepperoni
  • 1/2 cup pastas sauce
  • 1/4 cup olive oil

    Preheat oven 350

    Wash eggplant, remove skin and cut long way into four pieces.

    Take olive oil, pepper, garlic salt and oregano mix in a small bowl.

    Brush mixture onto both sides of eggplant pieces

    Lay pieces on cookie sheet.

    Top with red sauce, cheese and pepperoni.

    Make sure pasta sauce/red pizza sauce doesn't have sugar added.
