- 1 egg
- 2 Tbsp. sugar
- 1/2 c. safflower oil
- 1 c. each: molasses and boiling water
- 2 c. flour, dipped and leveled
- 1 tsp. each: baking soda, ginger and cinnamon
- 1/2 tsp. salt
Directions

1Preheat oven to 325°.

2Grease and flour 8 to 9-inch square pan; set aside.

3In bowl, mix beaten egg, sugar, oil and molasses; then boiling water.

4Sift together flour, soda, ginger, cinnamon and salt.

5Stir into liquid ingredients.

6Pour into prepared pan and bake until toothpick comes out clean, about 45 to 50 minutes. Cool 5 minutes in pan, then cut and serve.
