Ingredients
- 3/4 c. prune puree
- 3/4 c. prune juice
- 2 tsp. grated orange peel
- 1 c. toasted wheat germ
- 3/4 c. whole wheat flour
- 1/2 c. all-purpose flour
- 1/2 c. chopped pecans
- 2/3 c. packed brown sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 egg whites, lightly beaten
Directions

1Preheat oven to 350°.

2Grease loaf pan and dust with flour.

3In saucepan, mix puree, juice and orange peel.

4Bring just to boiling and remove from heat.

5In large bowl, combine dry ingredients and blend.

6Add prune mixture.

7Fold in egg whites.

8Add pecans. Spread in loaf pan.

9Bake about 50 minutes.

10Cool in pan 10 minutes, then turn out on rack to cool completely.
