Ingredients

  • 3/4 c. prune puree
  • 3/4 c. prune juice
  • 2 tsp. grated orange peel
  • 1 c. toasted wheat germ
  • 3/4 c. whole wheat flour
  • 1/2 c. all-purpose flour
  • 1/2 c. chopped pecans
  • 2/3 c. packed brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 egg whites, lightly beaten

Directions

    Preheat oven to 350°.

    Grease loaf pan and dust with flour.

    In saucepan, mix puree, juice and orange peel.

    Bring just to boiling and remove from heat.

    In large bowl, combine dry ingredients and blend.

    Add prune mixture.

    Fold in egg whites.

    Add pecans. Spread in loaf pan.

    Bake about 50 minutes.

    Cool in pan 10 minutes, then turn out on rack to cool completely.
