- 1/2 cup sugar
- 1 tablespoon baking powder
- 1 tablespoon baking soda
- 2 teaspoons cinnamon
- 1 cup raisins
- 1/4 teaspoon salt
- 1/2 cup applesauce
- 1/2 teaspoon lemon, rind of, grated
- 1 1/4 cups skim milk, at room temperature
- 1 teaspoon vanilla
- 1 egg white, whipped

1Preheat oven at 350.

2Prepare 2 bread pans with cooking spray and flour.

3In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.

4In another mixing bowl, combine applesauce, raisins, lemon peel, milk, vanilla, and egg white.

5Mix dry ingredients with wet ingredients just until moistened.

6Pour batter into prepared pan (s).
