- 2 c. flour
- 1 3/4 c. sugar
- 1/2 c. unsweetened cocoa powder
- 1 1/2 tsp. baking soda
- 1 1/2 c. skim or 1% milk
- 1/2 c. reduced fat margarine spread (Smart Beat or Promise)
- 1 1/2 tsp. vanilla
- 3 egg whites
- 1/4 c. sugar
Directions

1Combine dry ingredients and mix well.

2Beat in skim milk and softened spread along with the vanilla extract until smooth.

3Set aside.

4Combine egg whites with 1/4 cup sugar and beat.

5Fold egg whites into cake mixture until smooth.

6Pile into one or two well-greased and floured 9 or 10-inch round baking pans.

7Bake in a preheated 350° oven for about 1 hour if using one pan, or about 35 to 40 minutes if using two pans.

8Remove and let cool.
