Low Fat Refried Beans

  • 1 cup pinto beans
  • 1 tablespoon extra virgin olive oil
  • 3 garlic cloves
  • 1 onion
  • salt & pepper

Directions

    Put the pintos in a pan with water to cover.

    Bring to a boil, let boil 3 minutes.

    Turn off the heat and let stand forat least 45 minutes.

    Drain and refill pan with water to cover.

    Boil 30 minutes or till tender.

    Meanwhile, chop onions and garlic (I use a food processor, so it's really fast).

    Saute onions and garlic in olive oil.
  8. 8
    Put pintos and onions and garlic into food processor to mash.
