- 1 cup pinto beans
- 1 tablespoon extra virgin olive oil
- 3 garlic cloves
- 1 onion
- salt & pepper
Directions

1Put the pintos in a pan with water to cover.

2Bring to a boil, let boil 3 minutes.

3Turn off the heat and let stand forat least 45 minutes.

4Drain and refill pan with water to cover.

5Boil 30 minutes or till tender.

6Meanwhile, chop onions and garlic (I use a food processor, so it's really fast).

7Saute onions and garlic in olive oil.

8Put pintos and onions and garlic into food processor to mash.
