- 1 c. water
- 1/2 c. chopped raisins
- 2 1/2 c. skim milk
- 1/4 tsp. nutmeg
- Egg Beaters (equal to 3 eggs)
- 1/2 c. sugar or 1/4 c. sweetener
- 2 tsp. vanilla
- 1/4 tsp. salt
Directions

1In large saucepan, bring to boil the rice and water.

2Stir, cover and simmer until rice is tender and liquid is absorbed, about 14 minutes.

3Turn into a round 1 1/2-quart casserole, sprayed with nonstick spray.

4Stir in raisins; set aside.
