Ingredients
- Cake:
- 2 cups chopped rhubarb
- 1 1/2 cups white sugar
- 1/2 cup butter
- 1 egg
- 1 teaspoon vanilla
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- Topping:
- 1/4 cup butter
- 3 teaspoons cinnamon
- 1 cup brown sugar
Directions

1Blend butter and sugar in food processor. Add egg and vanilla.

2In another bowl, mix together flour, baking soda and salt. Add to creamed mixture alternatively with buttermilk.

3Add chopped rhubarb and pulse a couple times until blended and rhubrab is still in chunks.

4Put into a greased standard springform pan.

5Mix together the topping ingredients and sprinkle over top of cake.

6Bake at 350 degrees for approx 45 mins.
