Luncheon Shrimp Curry

Ingredients

  • 2 lb. cleaned raw shrimp
  • 1 1/2 c. chopped onion
  • 1 1/2 c. chopped celery
  • 1/2 c. butter or margarine
  • 1 (16 oz.) can applesauce
  • 4 cans condensed cream of celery soup
  • 1 (6 oz.) can broiled, sliced mushrooms, undrained
  • 2 Tbsp. curry powder
  • 1/4 tsp. salt

Directions

    Halve the shrimp lengthwise.

    Cook onion and celery in butter until almost tender.

    Stir in next 5 ingredients.

    Add shrimp. Simmer uncovered, stirring frequently, about 10 minutes.

    Serve over hot cooked rice.
