  • 8 lb. leg of lamb (oven ready)
  • 1/4 c. lemon juice
  • 2 cloves garlic, in slivers
  • 1/2 tsp. dried rosemary
  • 1 Tbsp. thyme
  • 1 tsp. basil, bay leaf or mint (dried)
  • 1/2 tsp. onion salt or 1/4 tsp. each onion powder and salt
  • 1/4 tsp. pepper

Directions

    Wash lamb in lemon juice and discard juice.

    Cut 1/2-inch slits in lamb, one inch apart and insert garlic.

    Mix dry ingredients and rub onto lamb.

    Bake at 325° for 30 minutes per pound.
