- 2-1/4 cups All-purpose Flour, Divided
- 1/2 cups Powdered Sugar
- 1 cup Butter
- 4 whole Eggs, Beaten
- 1/4 cups Lemon Juice
- 2 cups Sugar
- 1 teaspoon Baking Powder
Directions

1Preheat oven to 350°F.

2Combine 2 cups flour, powdered sugar, and butter; press into a greased 9x13 baking pan. Bake for 15 minutes, until it looks like it is starting to turn golden brown. Allow it to cool.

3Whisk together the eggs and lemon juice. Sift sugar, remaining flour, and baking powder. Add this to the egg mixture. Pour over the baked crust and return to the oven. Bake for an additional 25 minutes. Allow to cool and cut into squares.

4Make 16 squares, which could be 2 per person (for the 8 servings) or you could just eat it out of the pan, like I do, and then it's just one serving.
