  • 1 pkg. yellow cake mix
  • 4 eggs
  • 1/4 c. vegetable oil
  • 2 (8 oz.) pkg. cream cheese, softened
  • 1 (14 oz.) can sweetened condensed milk
  • 2 tsp. grated fresh lime peel
  • 1/4 to 1/3 c. lime juice
  • 1 tsp. vanilla
  • 1 (4 oz.) container nondairy whipped topping
  • lime slices (for garnish)

Directions

    Preheat oven to 300°.

    Reserve 1/2 cup dry cake mix.

    In large mixer bowl, combine remaining dry cake mix, 1 egg and oil.

    Press evenly on bottom and 1 1/2 inches up sides of greased 13 x 9 x 2-inch baking dish.

    In same bowl, beat cheese until fluffy.

    Beat in sweetened condensed milk until smooth.

    Add remaining eggs and reserved cake mix; beat one minute at medium speed.

    Stir in lime peel, juice and vanilla.
