- 1 Tbsp. unflavored gelatin
- 1/2 c. sugar
- 1/4 tsp. salt
- 4 egg yolks (reserve whites in large bowl of electric mixer)
- 1/2 c. lime juice
- 1/4 c. water
- few drops green food coloring
- 1/2 c. sugar
- 1 c. whipping cream
- 1 baked 9-inch pastry shell
Directions

1In 4-quart saucepan, combine gelatin, 1/2 cup sugar and salt. In mixing bowl, with wooden spoon, mix egg yolks, lime juice and water.

2Add to saucepan and mix well.

3Over medium heat, cook and stir just until mixture comes to full boil.

4The mixture will have started thickening.
