Macadamia Nut Cream Pie

- 1 1/3 c. milk
- 3/4 c. sugar
- chopped, toasted Macadamia nuts
- dash of salt
- 1 tsp. vanilla
- 3 eggs, separated
- 1 Tbsp. cornstarch
- 1 (8-inch) baked pastry shell
- whipped cream
Directions

1Combine 1 cup milk, 1/4 cup sugar, 1/4 cup nuts, salt and vanilla in top of double boiler.

2Place over boiling water and scald.

3Combine remaining 1/3 cup milk, egg yolks and cornstarch and add to hot milk mixture.

4Cook, stirring until thickened. Remove from heat and cool slightly.

5Beat egg whites with remaining 1/2 cup sugar until stiff.

6Carefully fold into milk mixture and turn into pastry shell.

7When cool, top with whipped cream and sprinkle with additional chopped nuts, if desired. Makes 6 servings.
