Macadamia Nut Pie

Ingredients

  • 3 eggs
  • 2/3 c. sugar
  • 1 c. light corn syrup
  • 1 1/2 c. chopped macadamia nuts (if the macadamia nuts are unsalted, add 1/2 tsp. salt)
  • 2 Tbsp. melted butter
  • 1 tsp. vanilla
  • 1 unbaked 9-inch pastry shell

Directions

    Beat eggs with sugar and corn syrup.

    Stir in the nuts.

    Add butter and vanilla.

    Blend well.

    Pour mixture into pastry shell. Bake in a moderately slow 325° oven for 50 minutes or until crust is golden and center of pie is set.
