Macaroni Salad

Ingredients

  • 1 small box elbow macaroni
  • 1/2 c. salad dressing
  • 1/2 c. chopped green peppers
  • 1/4 c. sweet pickle
  • 2 Tbsp. vinegar
  • 3 Tbsp. chopped pimientos
  • 1/2 c. chopped onion
  • 1/4 c. chopped celery
  • 4 hard-boiled eggs
  • 2 Tbsp. prepared mustard
  • 1 c. chopped tomatoes (optional)
  • salt and pepper to taste

Directions

    Cook macaroni according to package directions (do not overcook).

    Drain and soak in cold water for 10 to 15 minutes. Then drain and add mashed egg yolks, sugar and salt.

    Pour vinegar over this and let set while preparing other ingredients.

    Chop the egg whites.

    Add other ingredients and mix well.

    Chill.

    Garnish with celery seed and paprika.

    Don't use tomatoes if salad is made for next day.
