  • 8.75 oz ground beef
  • 4 1/2 cups breadcrumbs
  • 1 None small potato, peeled, grated
  • 1 None small carrot, grated
  • 1 None small zucchini, grated
  • 2 None spring onions, finely chopped
  • 1 None egg, lightly beaten
  • 1 tbsp barbecue sauce
  • 1 tbsp olive oil
  • 14 oz cooked macaroni
  • 2 1/2 cups pasta sauce
  • 1 (13.5 oz) can diced tomatoes
  • 1/3 cup fresh parsley, chopped + extra, to serve
  • 1/3 cup mozzarella cheese, grated
  • None None salad, to serve
  • None None crusty bread, to serve

Directions

    Preheat oven to 350°F.

    Combine ground beef, breadcrumbs, potato, carrot, zucchini, onions, egg and barbecue sauce. Season. Roll into small meatballs.

    Heat oil in a large frying pan over high heat. Cook meatballs, tossing, for 4-5 mins, until browned. Drain on paper towels.

    Place macaroni in a large baking dish. Combine meatballs, pasta sauce, tomatoes and parsley. Season then pour over macaroni. Sprinkle with mozzarella. Bake for 15-20 mins, until pasta is hot and cheese melts.

    Sprinkle with extra parsley. Serve with salad and crusty bread.
